Christmas Quiche Recipe – Spinach, Red Bell Pepper & Feta

‘Tis the season of family traditions, and in our home many of those traditions revolve around food. It starts with my annual cookie exchange (oh my, sugar high) and continues with our Christmas Eve tradition of eating tamales…it’s a Texas thing that we embraced many years ago. Christmas Quiche is on the menu for Christmas morning – the colors are festive, the taste is delicious and you’ll have it on the table quickly.

Christmas Quiche Recipe

 

Ingredients

    • 2, 9″ frozen pie crusts, lightly baked (not deep dish)
    • 1 red bell pepper, diced
      1, 10 bag fresh baby spinach
      4 eggs
      • 2/3 cup whipping cream
      1 1/3 cups feta cheese, crumbled
      2 tablespoons olive oil

 

Directions

    1. Preheat oven to 425
    1. Sprinkle 2/3 cup of feta cheese on the bottom of each lightly baked pie crust.
    1. Heat olive oil in a large skillet over medium heat, add red bell pepper and saute until soft (about 5 minutes).
    1. Add spinach and stir until wilted.
    1. Arrange spinach and red bell pepper mixture evenly on top of the feta cheese.
    1. Season with salt and pepper.
    1. Whisk together whipping cream and eggs.
    1. Pour egg mixture over spinach.

 

    Bake at 425 for 15 minutes, then reduce heat to 350 and bake 10 more minutes or until set.

We always serve Christmas Quiche with Ambrosia Fruit Salad made with fresh pineapple, mandarin oranges, toasted pecans and coconut.
