Rhythm Cafe’s Coconut Quiche Recipe

If you’ve been on our Historic West Palm Beach Neighborhood Food Tour, this is Rhythm Cafe’s Coconut Quiche Recipe. It’s a dessert that has been on their menu since they opened 30 years ago, and if you love coconut…you’ll think you died and landed in coconut heaven! Imagine the inside of a Mounds Bar but better!

Coconut Quiche Recipe

Ingredients:

  • 3 eggs
  • 1 1/4 cup sugar
  • 1/2 cup butter, melted
  • 1 teaspoon vanilla*
  • 1 teaspoon salt
  • 9 oz. coconut
  • 3/4 cup half & half
  • 1, 9-inch regular size pie crust*, unbaked

*Rhythm Cafe makes their own vanilla and pie crust, but we give you permission to skip that part and use a frozen pie crust and ordinary vanilla. Shhhh…don’t tell them.

Directions:

1. Preheat oven to 400º.
2. Heat half & half to a simmer.
3. Beat eggs and sugar with a whisk until blended.
4. Add melted butter, vanilla, salt and whisk until combined.
5. Sprinkle coconut over mixture.
6. Pour hot half & half over coconut.
7. Mix thoroughly.
8. Pour into pie crust.
9. Place in 400º oven.
10. Immediately turn oven down to 300º.
11. Bake for 45 – 55 minutes until golden brown.

How We Got The Name Palm Beach

If you go back to before Henry Flagler’s time, 1878 to be exact, there was a Spanish ship called the Providencia sailing from Cuba to Spain, and it wrecked just off our coast.

The cargo?

20,000 coconuts!

Guess what washed up on our beaches?

Lots of coconuts!

Now, it doesn’t take much to plant a coconut…give it a patch of dirt or patch of sand, and eventually you’ll have a giant coconut palm tree! Yes, coconuts really plant themselves, no shovel required. And, that’s how we got the name Palm Beach.
