Pineapple Salsa Recipe from Cholo Soy Cocina

The historic neighborhoods featured on our Historic West Palm Beach Neighborhood Food Tour used to be pineapple plantations. In that spirit, we are sharing a Pineapple Salsa Recipe from the best taco shop in town…Cholo Soy Cocina. On our food tour, this pineapple salsa is served on Cholo Soy’s Chancho (pork) Taco, but feel free to pull out the chips and dig in!

 

Pineapple Salsa Recipe

Ingredients:

  • 2 cups fresh pineapple, diced
  • 1/2 cup red bell pepper, diced
  • 1/2 cup Spanish onion, diced
  • 1 cup homemade pickle juice (2 tablespoons sugar, 2 tablespoons salt, 1 cup vinegar – heat to dissolve the sugar, add 5 – 10 ice cubes to cool)

Directions:

1. Stir together pineapple, red bell pepper and onion.

2. Pour pickle juice over the pineapple mixture.

3. Refrigerate and serve. Note: it’s best to let it sit in the refrigerator for a day before serving.

How to Grow a Pineapple

1. Live in a tropical climate.

2. Supplies needed: pineapple, flower pot, dirt.

3. Cut the top off your pineapple, leaving about 1/2 inch of the fruit.

4. Place the pineapple top in dirt – no need to dig a hole, no need to root it. Simply place the pineapple top in the dirt.

5. One year later you’ll get one pineapple!

6. Make pineapple salsa, eat tacos and enjoy your homegrown pineapple.

7. Now it’s time to start the process all over again.
